The yolk is the yellow part of the egg, and gets its color from plant pigments in the hen’s food. Egg yolks are made primarily of fats, proteins, and essential nutrients. The white part of the egg (also called the albumen) forms around the yolk later, providing cushioning between the embryo and the protective shell.

Why should you not eat egg yolks?

Much of the confusion around eggs has stemmed from the fact that egg yolks contain cholesterol. While egg yolks are high in cholesterol and are a major source of dietary cholesterol, it is saturated fatty acids that have a greater effect on our blood cholesterol levels and, therefore, heart disease risk.
